The actual original A4 thermostat was for 160 degrees unles you were in salt water, when a 140 degree thermostat was used.
Sounds like your transmission needs adjusting not to pop out of gear. At 2000 rpm you should be at hull speed. I was not on my boat and with a smaller diameter prop and less pitch was able to reach hull speed and still have some reserve for headwinds or current. A professional prop shop set me up, but he did need to know rpms to do so.
